Ingredients

Orange Salsa Tilapia

  • 1 navel orange, peeled, segmented, chopped
  • 1 (15 oz.) can low-sodium black beans, drained, rinsed
  • 1/2 cup seeded, finely chopped mini sweet peppers
  • 1 jalapeño, seeded, finely chopped
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup chopped sweet onion
  • 1 tablespoon lime juice
  • 4 (4 oz.) tilapia fillets
  • 1 teaspoon canola oil

Wannabe Apple Pie

  • 4 graham cracker squares
  • 1 apple, sliced
  • 1 teaspoon cinnamon
  • 2 tablespoons caramel dip

Instructions

Orange Salsa Tilapia

  1. Mix orange, beans, pepper, jalapeño, cilantro, onion and lime juice. Let stand 30 minutes.
  2. Coat 13x9-inch baking dish with cooking spray. Lay fish in single layer and brush with oil.
  3. Bake 12-14 minutes, or until fish flakes easily with fork. Top fish with salsa.
