How fun is it that kids can make these individual-sized pizzas all on their own? With minimal ingredients, this microwave mug pizza is sure to become a staple kids lunch idea.

Kids can even customize with their favorite pizza toppings like peppers, tomatoes, mushrooms and pepperoni!

Nutrition Tip: Lycopene (the pigment that makes tomatoes red) works as an antioxidant in the body, protecting cells from damage. Lycopene is even more concentrated when tomatoes are cooked, like marinara and other tomato sauce (and yes, even ketchup!)

With the school year speeding by I can already hear my kids running through the yard, rummaging through the pantry, and tracking wet footprints into the house. A vision of summer break.

I love hearing the sounds of kids playing and running around outside. I love them diving into freshly baked muffins or grabbing cold popsicles out of the freezer.

But let’s face it. Not all days are like this.

Often times, the sounds of children playing include a whole lot of fighting and those wet footprints, while endearing for a while, tend to get irritating as the kids don’t wipe their feet off before running inside to grab something.

Then there is lunchtime – and way too many requests for Mac & Cheese.

This year, I am trying to stay ahead of the game, coming up with fresh kid lunch ideas that will make my kids happy while providing them with the balanced nutrition I strive for.
