This reworked beef stew recipe is rich in veggies and protein, and sure to leave the family satisfied.

Ingredients

Healthy Hearty Beef Stew

  • 2 tablespoons olive oil
  • 2 1/2 pounds chuck roast, cut into 1-inch cubes
  • 1 1/2 tablespoon Worcestershire sauce
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 1 1/2 cup finely chopped onion
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon paprika
  • 4 large carrots, sliced
  • 2 cups sliced mushrooms
  • 2 russet potatoes, chopped
  • 2 1/2 tablespoons cornstarch

Broiled Veggies

  • 1 head cauliflower, sliced
  • 2 large tomatoes, chopped
  • 1 tablespoon olive oil

Instructions

Healthy Hearty Beef Stew

  1. Add 2½ cups water, Worcestershire, garlic, bay leaves, onion, salt, pepper, paprika, carrots, mushrooms and potatoes, cover and simmer 45 minutes (to thicken, remove 1 cup of liquid.).
  2. Combine ¼ cup water and cornstarch in small mixing bowl until smooth. Add to pot, stir and cook until bubbly. Remove bay leaves before serving.

Broiled Veggies

  1. Place under preheated broiler 5 inches from heat; broil 10 minutes, or until golden and tender.
