We love using the grill, especially in the summer. There is just something about a summer cookout that brings the family together.

Get older kids involved with helping to assemble the skewers with their favorite veggies. We love this combo of peppers, onions, and zucchini for bright and colorful chicken kebobs. Other great additions include mushrooms, cherry tomatoes, fresh pineapple, or eggplant.

To assemble your chicken kabobs you will slide on the vegetables one at a time, then the chicken. Repeat this process until the skewer is full, but you still have room on each end to pick it up. We brushed our chicken with Italian dressing for a bit of extra added flavor, it’s easy and we had it in the house, feel free to experiment with your favorite marinades.

You can use bamboo skewers or metal skewers to make your grilled chicken and veggie kabobs. If you use bamboo skewers, remember to soak them before using. It is recommended to soak your bamboo skewers in water for at least 30 minutes, but you can soak them overnight. Soaking your bamboo skewers before using them allows them to soak up some of that moisture so they won’t burn on the grill.

Once your kabobs are assembled, they only take about 15 minutes on the grill, meaning you will have a nutritious meal ready to serve the family in under 30 minutes! We love it when that happens 🙂

Ingredients
  

  • 1 pound boneless skinless chicken breast cubed
  • 1 yellow bell pepper chopped
  • 1 red bell pepper chopped
  • 1 sweet onion chopped
  • 2 large zucchini sliced
  • 2 tablespoons Italian dressing
  • 1 package chopped salad kit

Instructions
 

  • Skewer chicken, peppers, onions and zucchini onto skewers. Brush with Italian dressing.
  • Preheat grill or grill pan over medium-high heat. Add skewers and cook 7-10 minutes, turning every few minutes, until chicken is cooked through and veggies are tender. Remove from grill.
  • Serve with salad.
