Mini Mexican Potatoes

Serves: 2

Potatoes are kicked up a notch in this recipe with creamy guacamole and the tang of salsa.

Ingredients

  1. 2 red potatoes, halved
  2. 1 teaspoon olive oil
  3. 1/2 cup guacamole
  4. 1/4 cup salsa
  5. 1/4 cup lowfat mozzarella cheese, shredded

Directions

  1. Preheat oven to 400°F.
  2. Season potatoes with olive oil, salt and pepper. Lay on parchment-lined baking sheet and bake 15-20 minutes, or until tender.
  3. Scoop out ¼ of inside of each potato half. Add guacamole, salsa and cheese.
  4. Return to oven and bake 2 minutes, or until cheese melts.

Suggested Sides

1/2 cup cherry tomatoes
A glass of water
